Ingredients

  • 1 cup cherry or grape tomatoes halved
  • 1 red bell pepper diced
  • 1/4 red onion chopped
  • 2 cloves garlic minced (optional)
  • 6 oz feta cheese block preferred
  • 4 large eggs
  • 1 cup baby spinach
  • 4 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • Salt and black pepper to taste
  • Red pepper flakes optional

Instructions

Preheat oven

  • to 400°F (200°C).

Prepare the base:

  • In 4 ramekins or 1 baking dish, layer tomatoes, bell pepper, onion, garlic, and feta. Drizzle with olive oil.

Season:

  • Mix oregano, thyme, salt, pepper, and red pepper flakes. Sprinkle over each dish.

Bake base

  • for 25 minutes until tomatoes burst and feta softens.

Mix and add spinach:

  • Stir gently, then fold in spinach.

Add eggs:

  • Make wells and crack in eggs.

Final bake:

  • Bake 10 minutes more, until egg whites are set but yolks are soft.

Serve warm

  • topped with fresh herbs, alongside crusty bread or pita.
