Corn Pudding
- 2 cups corn kernels fresh, frozen thawed, or drained canned, divided
- 1 1/2 cups whole milk
- 4 large eggs
- 6 tablespoons granulated sugar
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons kosher salt
- 1/2 cup unsalted butter melted
Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
Blend 1 cup of corn kernels, whole milk, eggs, sugar, flour, and salt in a food processor or blender until smooth and well combined.
Add the remaining 1 cup of corn kernels and melted butter to the mixture. Stir gently with a spatula until the corn is evenly distributed.
Pour the mixture into the prepared 9x13-inch baking dish, spreading the kernels into an even layer.
Bake for 35 to 45 minutes, or until the edges are golden brown and the center is set with a slight jiggle.
Remove from the oven and let cool for 5 to 10 minutes before serving warm.
