Breakfast Quesadilla

This easy breakfast quesadilla recipe is perfect for busy mornings. It's a great source of protein and energy, and can be made in under 30 minutes.

Ingredients

Eggs

  • 2 large eggs

Cheese

  • 1 cup shredded cheese

Tortillas

  • 2 large tortillas

Vegetables

  • 1/2 cup diced vegetables

Meats

  • 1/2 cup cooked meats
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Scramble the eggs in a bowl and set aside.
  • Heat a large skillet over medium heat and add the diced vegetables. Cook until they are tender.
  • Add the cooked meats to the skillet and stir to combine.
  • In a separate pan or griddle, warm the tortillas over medium heat for about 30 seconds on each side.
  • Place one tortilla in the skillet and sprinkle shredded cheese on half of the tortilla.
  • Add the scrambled eggs, vegetables, and meats on top of the cheese.
  • Fold the tortilla in half to enclose the filling. Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.
  • Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.
  • Repeat with the remaining ingredients to make another quesadilla.
