- 1/2 cup cooked meats
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Scramble the eggs in a bowl and set aside.
Heat a large skillet over medium heat and add the diced vegetables. Cook until they are tender.
Add the cooked meats to the skillet and stir to combine.
In a separate pan or griddle, warm the tortillas over medium heat for about 30 seconds on each side.
Place one tortilla in the skillet and sprinkle shredded cheese on half of the tortilla.
Add the scrambled eggs, vegetables, and meats on top of the cheese.
Fold the tortilla in half to enclose the filling. Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.
Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.
Repeat with the remaining ingredients to make another quesadilla.
