- 1 tablespoon olive oil
- 12 oz andouille or kielbasa, chicken sausage, sliced ½″ thick
- 1 medium yellow onion diced (about 1 cup)
- 1 green bell pepper diced (about 1 cup)
- 2 stalks celery diced (¼ inch pieces)
- 2 cloves garlic minced
- 1½ cups long-grain white rice rinsed & drained
- 3 cups low-sodium chicken broth or vegetable broth
- 1 bay leaf
Spice Mix:
- 1 Tbsp Cajun seasoning
- 2 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme
- Salt & black pepper to taste
- Optional garnish/add-ins: chopped parsley or scallions
Sauté the Vegetables:
In the same skillet, add onion, bell pepper, and celery. Cook, stirring occasionally, until softened (4–5 minutes). Add garlic; cook 30 seconds.
Toast the Rice:
Stir in rinsed rice, coating each grain in the oil–vegetable mixture. Cook 2 minutes, stirring, until edges turn translucent.
