Cajun Sausage and Rice Skillet

Easy Cajun Sausage and Rice Skillet is a one pan meal! This recipe has rice, cajun sausage, peppers, and onion. A quick one skillet dinner!

Ingredients
  

  • 1 tablespoon olive oil
  • 12 oz andouille or kielbasa, chicken sausage, sliced ½″ thick
  • 1 medium yellow onion diced (about 1 cup)
  • 1 green bell pepper diced (about 1 cup)
  • 2 stalks celery diced (¼ inch pieces)
  • 2 cloves garlic minced
  • cups long-grain white rice rinsed & drained
  • 3 cups low-sodium chicken broth or vegetable broth
  • 1 bay leaf

Spice Mix:

  • 1 Tbsp Cajun seasoning
  • 2 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • Salt & black pepper to taste
  • Optional garnish/add-ins: chopped parsley or scallions

Instructions
 

Brown the Sausage:

  • Heat oil in a large skillet over medium heat. Add sausage slices in a single layer. Cook 3–4 minutes per side until golden. Remove and set aside.

Sauté the Vegetables:

  • In the same skillet, add onion, bell pepper, and celery. Cook, stirring occasionally, until softened (4–5 minutes). Add garlic; cook 30 seconds.

Toast the Rice:

  • Stir in rinsed rice, coating each grain in the oil–vegetable mixture. Cook 2 minutes, stirring, until edges turn translucent.

Add Spices & Liquids:

  • Sprinkle the spice mix over the rice and vegetables; stir well. Pour in broth, add the bay leaf, then nestle the browned sausage slices on top.

Simmer Covered:

  • Bring to a gentle simmer over medium-high heat, then reduce to low. Cover tightly and cook undisturbed for 18 minutes (white rice) or until liquid is absorbed.

Rest & Fluff:

  • Remove from heat; keep covered for 5 minutes. Discard bay leaf. Fluff rice with a fork, folding in sausage and any accumulated juices.

Serve & Garnish:

  • Transfer to a platter or serve straight from the skillet. Sprinkle chopped parsley or scallions on top and enjoy!
