Ingredients

  • 1 lb 450 g ground beef
  • ½ cup yellow onion finely diced
  • ½ cup dill pickles chopped
  • 1 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 cup shredded cheddar cheese
  • 8 egg roll wrappers
  • 1 large egg beaten (for egg wash)
  • Cooking spray or 1 tbsp olive oil

For serving (optional)

  • Ketchup-mayo dipping sauce
  • Extra pickles or sliced beef

Instructions

Prepare the filling

  • In a skillet over medium-high heat, add the ground beef. Cook until browned, breaking it up with a spatula.
  • Drain excess fat, then stir in diced onion, chopped pickles, Worcestershire sauce, salt, and pepper.
  • When the beef is fully cooked and seasoned, remove from heat and stir in shredded cheddar until melted. Let cool slightly.

Assemble the rolls

  • Lay one egg roll wrapper on a clean surface with a corner facing you.
  • Spoon about ¼ cup of the cheeseburger filling into the center.
  • Fold the bottom corner over the filling, tuck in the side corners, then roll tightly toward the top corner.
  • Brush the final edge with beaten egg to seal. Repeat with remaining wrappers and filling.

Air-fry to crispy perfection

  • Preheat your air fryer to 350 °F.
  • Lightly spray each roll with cooking spray (or brush with olive oil).
  • Place 3–4 rolls in the air fryer basket in a single layer, leaving space between them.
  • Cook for 8–10 minutes, flipping halfway, until golden brown and crisp.

Serve and enjoy

  • Transfer rolls to a platter and let rest 1–2 minutes.
  • Serve with your favorite dipping sauce—classic ketchup-mayo blend, big mac sauce, or spicy aioli.
  • Tip: To reheat leftovers, simply air-fry at 350 °F for 3–5 minutes to restore that crispy shell.
