  • 2 cups shredded rotisserie chicken or canned chicken, drained
  • 8 oz cream cheese softened
  • 1 cup sharp cheddar cheese freshly shredded
  • 0.5 cup cooked turkey bacon or beef bacon crumbled
  • 1 packet ranch seasoning mix 1 oz
  • 0.25 cup Duke’s mayonnaise
  • 0.5 cup green onions or chives thinly sliced
  • 4 large burrito-size flour tortillas
  • 0.5 cup romaine lettuce finely chopped
  • 1 optional bell peppers or spinach finely chopped

Instructions

  • In a large mixing bowl, combine the softened cream cheese, mayonnaise, and ranch seasoning mix. Stir until the mixture is smooth and well-incorporated.
  • Fold in the shredded chicken, shredded cheddar cheese, crumbled turkey or beef bacon, and sliced green onions. If using extra vegetables like peppers or spinach, mix them in now.
  • Lay the flour tortillas flat on a clean work surface or parchment paper.
  • Spread an even layer of the chicken and cheese mixture across each tortilla, leaving about a half-inch border around the edges.
  • Sprinkle the finely chopped romaine lettuce over the filling for added texture and crunch.
  • Roll each tortilla up as tightly as possible to create a firm log. Wrap each log tightly in plastic wrap.
  • Refrigerate the wrapped logs for at least 60 minutes. This 'chilling' step is crucial to ensure the filling sets and the tortillas don't tear when slicing.
  • Using a very sharp knife, remove the plastic wrap and slice the logs into 1-inch thick pinwheels. Secure with toothpicks if serving for a party.
