Ingredients

  • 1 lb smoked sausage or kielbasa sliced into rounds
  • 2 lbs russet or red potatoes washed and diced into 1-inch cubes
  • 1 1 oz packet dry ranch seasoning mix
  • 1 10.5 oz can cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 cups shredded cheddar cheese divided
  • 2 tablespoons butter melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Cooking spray
  • Chopped parsley for garnish optional

Instructions

  • Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish with cooking spray.
  • In a large bowl, whisk together the cream of chicken soup, sour cream, milk, melted butter, dry ranch seasoning packet, garlic powder, and pepper until smooth.
  • Add the diced potatoes and sliced sausage to the bowl. Toss well to ensure the ingredients are evenly coated with the creamy ranch mixture.
  • Transfer the potato and sausage mixture into the prepared baking dish, spreading it out into an even layer.
  • Cover the dish tightly with aluminum foil and bake for 45-50 minutes, or until the potatoes are fork-tender.
  • Remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  • Let the dish rest for 5 minutes before serving to allow the sauce to thicken slightly. Garnish with chopped parsley if desired.
