1tbspall-purpose flour
0.5cupchicken broth
1cupheavy whipping cream
1cupfresh Parmesan cheesegrated
1handfulFresh parsley or spinachfor garnish
Instructions
Prepare the chicken by halving or pounding the breasts to an even thickness, then season generously with salt, pepper, and Italian seasoning.
Heat olive oil and 1 tablespoon of butter in a large heavy skillet over medium-high heat. Sear the chicken until golden brown and the internal temperature reaches 165F. Remove chicken and set aside.
Lower the heat to medium. Add the remaining tablespoon of butter and minced garlic to the pan drippings, cooking for about 1 minute until fragrant.
Whisk in the all-purpose flour to create a quick roux. Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
Stir in the heavy whipping cream and freshly grated Parmesan cheese. Allow the sauce to simmer gently until it reduces and thickens.
Return the rested chicken to the skillet, spoon the creamy sauce over the meat, and garnish with fresh parsley or spinach before serving.
