Ingredients

Chicken & Base

  • 2 boneless skinless chicken breasts halved or pounded even
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp Italian seasoning
  • 1 pinch Salt and pepper to taste

Creamy Parmesan Sauce

  • 4 cloves fresh garlic minced
  • 1 tbsp all-purpose flour
  • 0.5 cup chicken broth
  • 1 cup heavy whipping cream
  • 1 cup fresh Parmesan cheese grated
  • 1 handful Fresh parsley or spinach for garnish

Instructions

  • Prepare the chicken by halving or pounding the breasts to an even thickness, then season generously with salt, pepper, and Italian seasoning.
  • Heat olive oil and 1 tablespoon of butter in a large heavy skillet over medium-high heat. Sear the chicken until golden brown and the internal temperature reaches 165F. Remove chicken and set aside.
  • Lower the heat to medium. Add the remaining tablespoon of butter and minced garlic to the pan drippings, cooking for about 1 minute until fragrant.
  • Whisk in the all-purpose flour to create a quick roux. Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
  • Stir in the heavy whipping cream and freshly grated Parmesan cheese. Allow the sauce to simmer gently until it reduces and thickens.
  • Return the rested chicken to the skillet, spoon the creamy sauce over the meat, and garnish with fresh parsley or spinach before serving.
