Ingredients

Aioli Base

  • 1 cup mayonnaise store-bought or homemade
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 3 cloves fresh garlic minced or mashed into a paste
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch cayenne pepper optional

Instructions

  • Choose your base: use a high-quality store-bought mayonnaise for a quick version or prepare a homemade mayonnaise if preferred.
  • Smash the garlic cloves into a smooth paste using a knife or garlic press, adding a small pinch of salt to help break them down.
  • In a mixing bowl, combine the mayonnaise, lemon juice, lemon zest, and Dijon mustard.
  • Add the garlic paste, black pepper, and cayenne pepper.
  • Stir thoroughly until the mixture is smooth, creamy, and fully combined.
  • Taste and adjust seasoning if necessary.
  • Transfer to an airtight container and refrigerate for at least 30 minutes before serving for the best flavor.

Notes

This garlic aioli is excellent as a dip for vegetables, a spread for burgers and sandwiches, or a drizzle for grilled meats and seafood. Store refrigerated for 3 to 7 days. Do not freeze, as the emulsion may separate.
