Ingredients

Mousse Base

  • 1 cup cottage cheese (small or large curd)
  • 2 ripe mangoes (preferably Ataulfo or Alphonso) peeled and cubed
  • 1-2 tablespoons honey, agave nectar, or maple syrup
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cardamom
  • 1 teaspoon fresh lemon juice

Optional Garnishes

  • Fresh mint leaves, crushed pistachios, toasted coconut flakes, or chia seeds to taste

Instructions

  • Prepare the mangoes by peeling and dicing the flesh into chunks, ensuring you remove as much fruit as possible from the pit.
  • Place the cottage cheese, mango chunks, chosen sweetener, vanilla extract, cardamom, and lemon juice into a high-speed blender or food processor.
  • Process the mixture for 20-30 seconds until the cottage cheese curds are completely broken down and the texture is silky and velvet-like.
  • Taste the mousse and adjust the sweetness or acidity by adding more honey or lemon juice if necessary, pulsing briefly to incorporate.
  • Transfer the mousse into individual ramekins or serving glasses.
  • Chill in the refrigerator for at least 30 to 60 minutes to allow the mousse to set and the flavors to meld.
  • Just before serving, top with fresh mint, pistachios, coconut, or chia seeds for added texture.
