Ingredients

  • 1 box of cake mix dry powder only, about 15oz
  • 2 large eggs room temperature
  • 1/2 cup vegetable oil canola oil, or melted butter
  • 1 cup optional mix-ins semi-sweet or white chocolate chips, M&Ms, sprinkles, or peanut butter chips
  • Optional: 2 to 3 tablespoons all-purpose flour to adjust for smaller 15oz boxes and prevent spreading

Instructions

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, combine the dry cake mix powder, eggs, and oil (or melted butter). Mix until just combined, being careful not to over-mix.
  • Gently fold in your desired mix-ins, such as chocolate chips or sprinkles.
  • Chill the cookie dough in the refrigerator for at least 30 minutes to prevent the cookies from spreading while baking.
  • Use a cookie scoop to portion the dough into uniform balls and place them onto the prepared baking sheet.
  • Bake for 10-12 minutes until the edges are set.
  • Remove from the oven and let the cookies sit on the hot pan for 5 minutes to allow for carryover cooking and setting.
  • Optional: Swirl a round biscuit cutter around the edges of the warm cookies for perfectly round shapes.
  • Transfer the cookies to a wire cooling rack to cool completely.
