Ingredients
1box of cake mixdry powder only, about 15oz
2large eggsroom temperature
1/2cupvegetable oilcanola oil, or melted butter
1cupoptional mix-inssemi-sweet or white chocolate chips, M&Ms, sprinkles, or peanut butter chips
Optional: 2 to 3 tablespoons all-purpose flourto adjust for smaller 15oz boxes and prevent spreading
Instructions
Preheat oven to 350 degrees F and line a baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, combine the dry cake mix powder, eggs, and oil (or melted butter). Mix until just combined, being careful not to over-mix.
Gently fold in your desired mix-ins, such as chocolate chips or sprinkles.
Chill the cookie dough in the refrigerator for at least 30 minutes to prevent the cookies from spreading while baking.
Use a cookie scoop to portion the dough into uniform balls and place them onto the prepared baking sheet.
Bake for 10-12 minutes until the edges are set.
Remove from the oven and let the cookies sit on the hot pan for 5 minutes to allow for carryover cooking and setting.
