Ingredients

Base Ingredients

  • 1 lb chicken breast or thighs cubed
  • 2 tablespoons vegetable oil
  • 1 cup extra-long grain white rice
  • 2 cups chicken broth
  • 15 oz black beans or pinto beans canned, drained and rinsed

Spices and Flavorings

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pinch Salt and black pepper to taste
  • 1/4 cup fresh lime juice

Optional Toppings

  • Corn salsa, guacamole, shredded lettuce, sour cream, fresh cilantro as desired

Instructions

  • Heat the vegetable oil in a large pot or deep skillet over medium-high heat.
  • Add the cubed chicken to the pot and sauté until browned on all sides, approximately 5-7 minutes.
  • Stir in the dry rice and spices (chili powder, cumin, smoked paprika, garlic powder, and onion powder). Toast the rice for 1-2 minutes until fragrant.
  • Pour in the chicken broth and add the beans. Stir well to combine and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 18-20 minutes, or until the liquid is fully absorbed and the rice is tender.
  • Remove from heat and let it sit covered for 5 minutes. Stir in the fresh lime juice and fluff the mixture with a fork.
  • Portion into bowls and serve immediately with desired toppings such as corn salsa, guacamole, lettuce, and sour cream.
