Equipment

  • Large mixing bowl
  • Cutting Board
  • Skillet (optional)

Ingredients

Main Ingredients

  • 2 cups Rotisserie chicken, grilled chicken breast, or chicken lunch meat shredded or sliced
  • 2 cups Romaine lettuce, kale, or spinach chopped
  • 0.33 cup Caesar dressing traditional, light, or yogurt-based
  • 0.25 cup Parmesan or Pecorino cheese grated
  • 0.5 cup Croutons traditional or gluten-free
  • 4 Flour tortillas, low-carb wraps, or gluten-free wraps large 10-inch sizes
  • 1 tablespoon Lemon juice and zest fresh
  • 1 clove Fresh garlic minced

Optional Additions

  • 0.25 cup Roasted almonds or carrot batons for extra crunch
  • 0.5 cup Chickpeas vegan protein alternative

Instructions

  • Prepare the protein by shredding rotisserie chicken or slicing grilled chicken breast into bite-sized pieces.
  • In a large mixing bowl, combine the chopped greens (romaine, kale, or spinach) with the Caesar dressing, parmesan cheese, lemon juice, zest, and minced garlic. Toss until evenly coated.
  • Gently fold in the croutons and your chosen chicken or protein source.
  • Lay the tortilla or wrap flat on a clean surface. To prevent sogginess, place a layer of chicken or a sprinkle of cheese directly against the wrap to act as a moisture barrier.
  • Place a generous portion of the Caesar salad mixture in the center of the wrap.
  • Execute the perfect fold by tucking in the sides of the tortilla and rolling it tightly from the bottom up to ensure the filling stays secure.
  • Optional: For a warm, crunchy variation, place the assembled wrap in a dry pan over medium heat for 1-2 minutes per side until golden brown.
  • Slice the wrap diagonally and serve immediately, or pack into a bento box for a portable meal.
