Instructions
Pat the salmon fillets completely dry with a paper towel. Season generously on all sides with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Sear the salmon fillets flesh-side down for 4-5 minutes until a golden crust forms. Flip and cook for another 3-4 minutes until cooked through. Transfer the salmon to a plate and set aside.
Stir in the chopped sun-dried tomatoes and cook for 1 minute. Pour in the heavy cream, scraping up any browned bits from the bottom of the skillet, and bring to a gentle simmer.
Add the fresh baby spinach to the skillet and let it wilt into the hot cream. Slowly stir in the grated parmesan cheese until the sauce is smooth and slightly thickened.
Return the cooked salmon fillets to the skillet. Spoon the creamy garlic sauce over the fish and simmer for 1-2 minutes until everything is warmed through. Serve immediately!
