Ingredients

  • Eggs
  • Cheese
  • Turkey bacon
  • Spinach

Instructions

  • Preheat your oven to 375°F (190°C).
  • Make the quiche pastry by combining flour, butter, and a pinch of salt in a bowl. Gradually add cold milk, mixing until a dough forms. Let the dough rest for about 30 minutes.
  • Prepare the filling by chopping the turkey bacon, spinach, and mushrooms. In a pan, heat some olive oil and cook the chopped ingredients until the bacon is crispy and the vegetables are tender.
  • Assemble the mini quiches by rolling out the rested dough and cutting out circles. Place a spoonful of your prepared filling into the center of each circle, then top with cheese and fold the dough over to form a half-moon shape. Seal the edges.
  • Bake the mini quiches in the preheated oven for 15-20 minutes, or until golden brown.
