Equipment

  • 12-cup muffin tin
  • Silicone muffin liners
  • Medium skillet
  • Large mixing bowl
  • Silicone spatula

Ingredients

  • 1 lb turkey breakfast sausages removed from the casing
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup 2% cottage cheese
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 cups chopped vegetables (broccoli, spinach, bell peppers, etc.)
  • 3 green onions greens and whites sliced finely
  • 1 cup cheddar cheese shredded

Instructions

Prep the Oven and Sausage Base

  • Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with silicone muffin liners or non-stick parchment cups.
  • Remove the sausages from their casings and cook them in a medium skillet set over medium-high heat, breaking the meat into small crumbles with a wooden spoon for 6 to 8 minutes until thoroughly browned and fragrant. Set the skillet aside and let the sausage cool slightly so it does not scramble the eggs later.

Mix the Wet Base and Dry Flour

  • In a large mixing bowl, whisk together the eggs, milk, 2% cottage cheese, olive oil, and maple syrup for about 1 minute until well blended and bubbly on top.
  • Sprinkle the all-purpose flour, baking powder, and salt across the liquid mixture, then stir gently with a silicone spatula just until the dry ingredients are moistened and a soft, cohesive batter forms.
  • Add the browned sausage crumbles, prepared chopped vegetables, sliced green onions, and 3/4 cup of the shredded cheddar cheese into the bowl, folding gently until the mix-ins are evenly distributed throughout the batter.

Fill and Bake

  • Divide the batter evenly among the 12 prepared muffin cups, placing roughly 4 heaping tablespoons (one heaping 1/4 cup) into each cavity before scattering the remaining 1/4 cup of cheddar cheese over the tops.
  • Bake at 400°F (200°C) for 23 to 27 minutes until the tops are puffed, the edges show deep golden browning, and a toothpick inserted into the center emerges clean with an internal temperature of 200°F.
  • Let the muffin tin rest on the counter for 5 to 10 minutes to allow the interior structure to firm up, then transfer the muffins onto a wire cooling rack to cool completely.

Notes

Moisture Control Tip: To avoid gummy muffin centers, ensure all high-moisture vegetables like spinach or zucchini are cooked first and wrung completely dry of excess water before adding them to the batter.
Storage Tip: Store fully cooled muffins in an airtight container lined with a paper towel in the refrigerator for up to 5 days, or flash-freeze them on a baking sheet for 2 hours before transferring to a freezer-safe bag for up to 3 months.
Reheating Tip: Microwave refrigerated muffins for 30 to 45 seconds for a soft texture, or reheat frozen muffins in an air fryer at 325°F for 4 to 6 minutes to restore a fresh-baked, crispy outer crust.
