Ingredients

Gnocchi

  • 1 package gnocchi
  • 2 tablespoons olive oil
  • 1 cup roasted vegetables such as zucchini, bell peppers, and cherry tomatoes
  • 1 cup tomato sauce
  • 1 cup mozzarella cheese shredded
  • 1/2 cup parmesan cheese grated

Instructions

  • Preheat the oven to 400°F (200°C).
  • Toss the gnocchi with olive oil, salt, and pepper on a sheet pan.
  • Roast the gnocchi in the oven for 15-20 minutes or until they are golden brown.
