Equipment

  • skillet
  • Mixing bowl
  • Serrated Knife or Unflavored Dental Floss
  • Plastic wrap

Ingredients

Main Ingredients

  • 4 10-inch flour tortillas
  • 8 oz cream cheese softened
  • 0.5 cup sour cream or Greek yogurt
  • 1 lb lean ground beef or shredded chicken
  • 1 packet taco seasoning
  • 1 cup shredded Mexican cheese blend
  • 4 oz diced tomatoes drained
  • 0.25 cup black olives sliced
  • 0.25 cup green onions sliced

Signature Zesty Dipping Sauce

  • 0.5 cup plain Greek yogurt
  • 1 tbsp fresh lime juice
  • 1 tsp taco seasoning

Instructions

  • If using ground beef, brown it in a skillet over medium heat until fully cooked. Drain the excess fat completely and stir in the taco seasoning. If using chicken, ensure it is fully cooked and shredded.
  • In a medium bowl, combine the softened cream cheese and sour cream (or Greek yogurt) until smooth.
  • Fold in the cooked protein, shredded cheese, drained tomatoes, black olives, and green onions.
  • Spread a thin, even layer of the mixture onto each flour tortilla, leaving a small half-inch margin at the edges.
  • Roll the tortillas tightly into a log shape.
  • Wrap the logs securely in plastic wrap and refrigerate for at least 2 hours to allow the filling to firm up.
  • Using a sharp serrated knife or unflavored dental floss, slice the chilled logs into 1-inch thick rounds.
  • To make the zesty dipping sauce, whisk together the plain Greek yogurt, fresh lime juice, and taco seasoning in a small bowl until smooth.
  • Arrange the sliced pinwheels on a platter and serve alongside the dipping sauce.
