Ingredients

Chicken and Vegetables

  • 1.5 lbs boneless skinless chicken breasts cut into 1-inch cubes
  • 1 cup fresh pineapple cut into 1-inch chunks
  • 1 red bell pepper cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • 1 red onion cut into 1-inch pieces

Teriyaki Marinade and Glaze

  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 0.25 cup pineapple juice
  • 1 tbsp minced ginger
  • 2 cloves garlic minced

Instructions

  • Whisk together the soy sauce, brown sugar, pineapple juice, minced ginger, and minced garlic in a bowl. Reserve half of the mixture for glazing.
  • Toss the chicken cubes with the remaining marinade and refrigerate for at least 30 minutes.
  • Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto skewers, alternating ingredients for color and even cooking.
  • Preheat the grill to medium-high heat.
  • Grill the skewers for 12 to 15 minutes, turning occasionally until the chicken is fully cooked and lightly charred.
  • Brush generously with the reserved teriyaki glaze during the last 5 minutes of grilling.
  • Serve immediately while hot, garnished with extra pineapple or fresh herbs if desired.
