Chicken and Vegetables 1.5 lbs boneless skinless chicken breasts cut into 1-inch cubes 1 cup fresh pineapple cut into 1-inch chunks 1 red bell pepper cut into 1-inch pieces 1 green bell pepper cut into 1-inch pieces 1 red onion cut into 1-inch pieces Teriyaki Marinade and Glaze 0.5 cup soy sauce 0.25 cup brown sugar 0.25 cup pineapple juice 1 tbsp minced ginger 2 cloves garlic minced
Whisk together the soy sauce, brown sugar, pineapple juice, minced ginger, and minced garlic in a bowl. Reserve half of the mixture for glazing.
Toss the chicken cubes with the remaining marinade and refrigerate for at least 30 minutes.
Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto skewers, alternating ingredients for color and even cooking.
Preheat the grill to medium-high heat.
Grill the skewers for 12 to 15 minutes, turning occasionally until the chicken is fully cooked and lightly charred.
Brush generously with the reserved teriyaki glaze during the last 5 minutes of grilling.
