Ingredients

Main Ingredients

  • 4 chicken breasts boneless and skinless
  • 4 zucchini spiralized into noodles
  • 1 cup marinara sauce low-sugar
  • 1 cup mozzarella cheese shredded, part-skim
  • 0.5 cup parmesan cheese freshly grated

Breading & Searing

  • 2 eggs beaten
  • 0.5 cup flour whole wheat
  • 1 cup breadcrumbs whole wheat or panko
  • 2 tbsp olive oil extra virgin
  • 1 tsp salt to taste
  • 1 tsp pepper freshly cracked

Instructions

  • Preheat oven to 400°F (200°C).
  • Prepare zucchini noodles using a spiralizer or food processor.
  • Season chicken breasts with salt and pepper.
  • Dredge chicken in flour, then eggs, and finally breadcrumbs.
  • Heat olive oil in a skillet and cook chicken until browned.
  • Transfer chicken to a baking dish and top with marinara sauce and mozzarella cheese.
  • Bake in the oven for 20-25 minutes or until cheese is melted and bubbly.
