Ingredients

  • 2 cups cooked chicken rotisserie, grilled, or air-fried, shredded or cubed
  • 4 cups mixed greens spinach, or romaine lettuce
  • 1 cup fresh strawberries sliced
  • 1/2 cup red or green grapes halved
  • 1/2 cup fresh sweet corn off the cob
  • 1/4 cup red onion finely chopped
  • 1/4 cup sliced almonds or pecans toasted
  • 1/4 cup feta or goat cheese crumbles
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon or lime juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh cilantro or dill chopped
  • Salt and pepper to taste

Instructions

  • Prepare the chicken by using leftover rotisserie chicken or cooking fresh chicken breast in an air fryer to avoid turning on the oven in the summer heat.
  • In a small bowl, whisk together the Greek yogurt, extra virgin olive oil, lemon juice, Dijon mustard, fresh herbs, salt, and pepper to create a healthy, lightened-up dressing.
  • In a large serving bowl, combine the mixed greens, prepared chicken, strawberries, grapes, sweet corn, red onion, and toasted nuts.
  • Drizzle the homemade yogurt dressing over the salad and toss gently to ensure all ingredients are evenly coated.
  • Sprinkle the cheese crumbles over the top. Serve immediately al fresco, or portion into meal prep containers (storing the dressing separately) for easy lunches throughout the week.
