Ingredients

  • 1 cup old-fashioned oats
  • 1 scoop (31g) vanilla whey protein powder
  • 1 cup non-fat plain Greek yogurt
  • 1/2 cup liquid egg whites
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  • Preheat your waffle iron to a medium-high setting and lightly coat with non-stick cooking spray.
  • Place the old-fashioned oats into a blender or food processor and pulse until they reach a fine, flour-like consistency.
  • In a medium mixing bowl, whisk together the oat flour, vanilla protein powder, baking powder, and salt until well combined.
  • Add the Greek yogurt, liquid egg whites, and vanilla extract to the dry mixture. Stir with a spatula until the batter is smooth and no large lumps remain.
  • Pour approximately 1/2 cup of the batter onto the center of the preheated waffle iron.
  • Close the lid and cook for 3 to 4 minutes, or until the exterior is golden brown and crispy and the steam stops escaping from the sides.
  • Carefully remove the waffle and repeat the process with the remaining batter.
  • Serve immediately with fresh berries or a drizzle of sugar-free maple syrup.
