Ingredients
1-2tspMatcha Green Tea powderceremonial grade recommended
1Umeboshi Plumpitted and mashed or 1/2 tsp Umeboshi paste
1inchFresh Gingergrated or thinly sliced
1small stripapprox. 2x2 inch Kombu Seaweed
8-10ozHot wateraround 175°F/80°C, not boiling
Instructions
Place the mashed umeboshi plum (or paste) and grated fresh ginger into a heat-resistant mug or bowl.
Add the strip of kombu seaweed to the mug.
In a separate bowl, sift the matcha powder. Add about 2 oz of hot water (175°F/80°C) and whisk vigorously with a bamboo whisk (chasen) or frother until smooth and frothy, ensuring no clumps remain.
Pour the remaining 6-8 oz of hot water over the umeboshi, ginger, and kombu in the mug. Let steep for 3-5 minutes to infuse the flavors, then remove the kombu strip if desired.
Pour the whisked matcha into the mug with the infused water, umeboshi, and ginger. Stir gently to combine.
Serve warm and enjoy immediately. Optionally, adjust water temperature or add a slice of lemon.
