Ingredients

  • 1-2 tsp Matcha Green Tea powder ceremonial grade recommended
  • 1 Umeboshi Plum pitted and mashed or 1/2 tsp Umeboshi paste
  • 1 inch Fresh Ginger grated or thinly sliced
  • 1 small strip approx. 2x2 inch Kombu Seaweed
  • 8-10 oz Hot water around 175°F/80°C, not boiling

Instructions

  • Place the mashed umeboshi plum (or paste) and grated fresh ginger into a heat-resistant mug or bowl.
  • Add the strip of kombu seaweed to the mug.
  • In a separate bowl, sift the matcha powder. Add about 2 oz of hot water (175°F/80°C) and whisk vigorously with a bamboo whisk (chasen) or frother until smooth and frothy, ensuring no clumps remain.
  • Pour the remaining 6-8 oz of hot water over the umeboshi, ginger, and kombu in the mug. Let steep for 3-5 minutes to infuse the flavors, then remove the kombu strip if desired.
  • Pour the whisked matcha into the mug with the infused water, umeboshi, and ginger. Stir gently to combine.
  • Serve warm and enjoy immediately. Optionally, adjust water temperature or add a slice of lemon.
