Ingredients

Pumpkin Puree

  • 1 can pumpkin puree 15-ounce can
  • 3 large eggs
  • 1 cup neutral oil
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 8 ounces cream cheese
  • 4 tablespoons unsalted butter
  • 2 cups powdered sugar

Instructions

  • Preheat the oven to 350°F.
  • Grease a 10 x 14-inch baking pan.
  • Whisk the eggs and add the pumpkin puree, oil, granulated sugar, light brown sugar, and vanilla extract. Mix well.
  • Mix in the flour, kosher salt, baking soda, baking powder, and ground cinnamon.
  • Pour the batter into the prepared pan and bake for 20-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan before frosting.
  • Beat the cream cheese and unsalted butter until smooth.
  • Gradually add the powdered sugar and mix until smooth and creamy.
  • Spread the frosting over the cooled bars.
