Ingredients

Spiced Sugar Rim

  • 2 tablespoons granulated sugar
  • 0.5 teaspoon pumpkin pie spice divided

Mocktail Base

  • 0.5 cup canned pumpkin puree 100% pure pumpkin
  • 1 cup high-quality apple cider chilled
  • 2 tablespoons pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon pumpkin pie spice
  • 2 cups ice cubes divided

Finishing & Garnish

  • 1 cup chilled non-alcoholic ginger beer
  • 2 cinnamon sticks for garnish
  • 2 fresh rosemary sprigs for garnish

Instructions

  • Prepare the glasses by mixing the granulated sugar and 1/2 teaspoon of pumpkin pie spice on a small shallow plate. Dampen the rims of two rocks glasses with water or a lemon wedge, then dip them into the spiced sugar to coat.
  • In a cocktail shaker, combine the pumpkin puree, apple cider, maple syrup, lemon juice, and the remaining 1/2 teaspoon of pumpkin pie spice.
  • Add 1 cup of ice to the shaker. Secure the lid and shake vigorously for 20 to 30 seconds. This step is essential to fully emulsify the thick pumpkin puree with the liquid ingredients.
  • Place fresh ice in the prepared glasses. Double-strain the pumpkin mixture through a fine-mesh strainer into the glasses to remove any pumpkin fibers and ensure a silky-smooth mouthfeel.
  • Top each glass with 1/2 cup of chilled ginger beer. Stir very gently with a bar spoon to combine without losing the carbonation.
  • Garnish each mocktail with a cinnamon stick and a fresh rosemary sprig for aroma. Serve immediately while ice cold.
