2ozTequilaBlanco or Reposado
1ozFresh Lemon Juice
0.75ozPassion Fruit Liqueuror Passion Fruit Syrup
0.5ozVanilla Simple Syrup
1Egg Whiteor 1 oz Aquafaba
Handful of Fresh Raspberries
2dashes Angostura or Orange Bitters
Ice
Garnish: Lemon twistedible flowers, or fresh raspberries
Instructions
Add the fresh raspberries and vanilla syrup to a cocktail shaker and muddle gently until the berries are crushed.
Pour in the tequila, passion fruit liqueur, fresh lemon juice, egg white, and bitters.
Perform a 'Dry Shake': Seal the shaker without ice and shake vigorously for 10-15 seconds to emulsify the egg white and create foam.
Open the shaker, add a scoop of ice, and seal again.
Perform a 'Wet Shake': Shake vigorously for another 15-20 seconds until the shaker is frosty cold.
Double strain the mixture through a fine-mesh sieve into a chilled Coupe or Nick and Nora glass to remove raspberry seeds and ice chips.
Garnish with a lemon twist, fresh raspberry, or edible flower before serving.
