Ingredients

Rosemary Honey Syrup

  • 1 cup water
  • 1 tablespoon honey
  • 4 sprigs rosemary sprigs fresh

Mocktail Base & Assembly

  • 2 cups pear juice
  • 1 tablespoon lemon juice freshly squeezed
  • 1 cup sparkling water chilled
  • 1 pear sliced, for garnish

Instructions

  • In a small saucepan, combine 1 cup of water and 1 tablespoon of honey. Heat over low heat, stirring until the honey dissolves.
  • Add 4 rosemary sprigs to the honey syrup and remove from heat. Let it steep for 10-15 minutes, then strain the syrup and discard the rosemary.
  • Fill a cocktail shaker with ice. Add 2 cups of pear juice and 1 tablespoon of lemon juice.
  • Add the rosemary honey syrup to the cocktail shaker and shake well for about 15-20 seconds.
  • Strain the mixture into a glass filled with ice.
  • Top the mocktail off with 1 cup of sparkling water.
  • Garnish with a slice of pear and a rosemary sprig, if desired.
