Equipment

  • Heavy-duty aluminum foil
  • Large mixing bowl
  • Chef's knife
  • Cutting Board

Ingredients

Main Ingredients

  • 14 oz smoked sausage sliced
  • 4 medium potatoes diced
  • 1 large bell pepper chopped
  • 1 medium yellow onion chopped

Seasoning

  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning

Instructions

  • Preheat your campfire coals or outdoor grill to medium-high heat.
  • Cut four large, 12-inch sheets of heavy-duty aluminum foil.
  • In a large bowl, combine the sliced smoked sausage, diced potatoes, chopped bell pepper, and chopped onion.
  • Drizzle the olive oil over the mixture, sprinkle with Cajun seasoning, and toss until everything is evenly coated.
  • Divide the mixture equally among the center of the four foil sheets.
  • Fold the sides of the foil over the food, crimping the edges tightly to seal the packets and trap the steam.
  • Cook the packets over the campfire coals or grill for 20 to 25 minutes, or until the potatoes are fork-tender.
  • Carefully open the foil packets to release the hot steam, let cool slightly, and serve immediately.

For the best results, ensure your potatoes are cut uniformly so they cook at the same rate as the other ingredients. Heavy-duty aluminum foil is highly recommended to prevent any tearing while cooking over hot coals.
