Ingredients

Protein

  • 1 lb chicken breast

Vegetables

  • 2 bell peppers any color
  • 1 onion

Seasonings

  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • salt and pepper

Tortillas

  • 8-10 tortillas

Instructions

  • Preheat oven to 400°F (200°C).
  • Slice chicken, bell peppers, and onions into thin strips.
  • Mix together chicken, bell peppers, onions, fajita seasoning, salt, and pepper in a large bowl.
  • Drizzle with olive oil and toss to coat.
  • Spread mixture out in a single layer on a sheet pan.
  • Bake for 20-25 minutes or until chicken is cooked through and vegetables are tender.
  • Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  • Assemble fajitas by placing cooked chicken and vegetable mixture onto tortillas and adding desired toppings.
