Ingredients

Snickerdoodle Cookie Mix or Homemade Dough

  • You can use a store-bought snickerdoodle cookie mix if you want to save time. Alternatively make a homemade blend by combining flour, sugar, cream of tartar, baking soda, salt, and a little cinnamon.

Butter

  • Melted or softened this brings a buttery richness to the cobbler batter. It helps the dough reach that crisp yet soft finish.

Brown Sugar

  • Brown sugar adds a subtle molasses depth enhancing the warm notes of cinnamon and sugar. Some bakers like to mix it into the topping to create a sweet crust.

Cinnamon Sugar Packet

  • If you are using a snickerdoodle cookie mix you may find a cinnamon sugar packet included. This is perfect for sprinkling on top of the batter. If not, simply blend cinnamon and sugar at home.

Apple Pie Filling (Optional)

  • Add the apple pie filling layer at the bottom of your baking dish if you want to create an apple snickerdoodle cobbler. This filling for an apple snickerdoodle dessert brings a fruity twist that pairs beautifully with cinnamon.

Cream Cheese (Optional)

  • Swirl small dollops of cream cheese into the cookie mixture for tangy pockets. This is entirely up to your preference but can offer a fun flavor change.

Caramel Sauce (Optional)

  • A drizzle of caramel can give your cobbler a richer sweetness. If you want an even fancier finish use homemade salted caramel sauce.

Extras

  • Some like to include cherry pie filling for variety while others might try chopped nuts. You can also experiment with leftover cobbler by folding in new add-ins the next day—if there is any left to spare.

Instructions

Preheat and Prepare

  • Start by preheating your oven to around 350°F (175°C). Lightly grease a suitable baking dish. This dish will hold your cookie mixture into the bottom, so choose one that leaves room for the cobbler to expand.

Create the Cookie Base

  • If you are using a snickerdoodle cookie mix, prepare it according to the package directions. If you are going homemade, combine flour, sugar, cream of tartar, baking soda, salt, and melted butter. Stir until a soft dough forms. Set aside about half of the cookie dough mixture; you will use it later as part of the cobbler topping.

Optional Apple Pie Filling Layer

  • If you want to make this cobbler with a fruit twist, spread the apple pie filling on the base of your baking dish. This step is optional but adds a comforting, hot apple pie appeal to the final product.

Layer the Dough

  • Take the remaining cookie dough and press it gently over the apple pie filling if you included it. If not, simply press the dough into the baking dish. The layer does not have to be perfectly even.

Add Cinnamon Sugar

  • Open the sugar packet from the snickerdoodle cookie mix or create your own blend of cinnamon and sugar. Sprinkle part of this mixture over the dough for extra flavor.

Form the Cobbler Topping

  • With the half of the cookie dough you set aside, add a little milk or melted butter if you prefer a softer topping. Drop dollops of the remaining cookie dough across the entire surface of the snickerdoodle cobbler. This method creates that rustic cobbler look and allows pockets of dough to bake into a chewy snickerdoodle texture.

Sprinkle Again

  • Take the rest of your cinnamon sugar packet or homemade cinnamon-sugar blend, and sprinkle it over the top of the batter. Some people also like to add a combination of cinnamon and brown sugar at this point for a slightly caramelized finish.

Bake Until Golden

  • Place the dish into your preheated oven. Bake for about 25 to 30 minutes, or until the cobbler is getting too dark on the edges. Keep an eye out for a golden brown hue on top. That color signals your cobbler is done.

Cool Briefly

  • Once done, remove the dish from the oven and let the cobbler rest for a few minutes. If you slice right in, it will be very hot and may not hold its shape well. Waiting a bit helps everything set, so you can cut or spoon it out neatly.
