Ingredients

Gummy Base

  • 2 cups Fresh ripe watermelon cubed
  • 3 tablespoons Unflavored gelatin grass-fed or bovine recommended
  • 2 tablespoons Fresh lemon juice
  • 3 tablespoons Honey or agave
  • 1 teaspoon Citric acid

Sour Coating (Optional)

  • 2 tablespoons Granulated sugar optional for coating

Instructions

  • Blend fresh watermelon in a high-speed blender until smooth.
  • Strain the puree through a fine mesh sieve to extract clear watermelon juice and remove pulp.
  • Bloom the gelatin by sprinkling it over a small amount of cold juice and letting it hydrate.
  • In a small saucepan, combine the remaining watermelon juice and honey or agave over low heat.
  • Whisk in the bloomed gelatin and lemon juice, stirring constantly until the gelatin is fully dissolved. Do not let the mixture boil.
  • Stir in citric acid to your preferred level of sourness.
  • Carefully pour the mixture into silicone molds.
  • Refrigerate the molds until the gummies are firm and completely set.
  • Optional: For a chewier, shelf-stable texture, remove gummies from molds and air-dry on a rack for 24-48 hours.
  • Optional: Toss the finished gummies in a mixture of granulated sugar and citric acid for a traditional sour coating.
