Ingredients

For the patties

  • 1 ¼ lb ground turkey 93 percent lean for best juiciness
  • 1 ½ cups fresh spinach minced and packed
  • 4 oz feta cheese crumbled
  • 2 garlic cloves minced
  • ¼ cup Italian-style breadcrumbs
  • 2 tsp Worcestershire sauce
  • ¼ tsp freshly ground black pepper
  • 1 ½ Tbsp olive oil plus a little extra if pan-searing

For serving

  • 4 hamburger buns lightly toasted
  • Mayonnaise or preferred spread
  • Thin cucumber rounds
  • Paper-thin red onion slices

Instructions

Mix the ingredients

  • Place turkey, spinach, feta, garlic, breadcrumbs, Worcestershire, pepper, and olive oil in a large bowl. Gently fold with a fork or your fingers until just combined.

Shape the patties

  • Divide the mixture into four equal portions. Flatten each to about four inches wide and one inch thick. Press a shallow dimple in the center of each patty to help them cook evenly.

Chill for firmness

  • Set the patties on a parchment-lined plate, cover, and refrigerate one hour or freeze twenty minutes. Chilling lets the breadcrumbs hydrate and helps the burgers hold together.

Preheat the grill

  • Heat the grill to medium-high, about 400 °F, and oil the grates well to prevent sticking.

Cook the patties

  • Grill for four to five minutes per side, turning once, until an instant-read thermometer reads 165 °F in the center. Move patties to a cooler spot if flare-ups occur.

Assemble and serve

  • Rest cooked patties for two minutes. Place on toasted buns with mayonnaise, cucumber slices, and red onion. Serve hot.
