Ingredients

Sweet Potatoes

  • 2 large sweet potatoes peeled and cut into 1-inch cubes

Olive Oil and Seasonings

  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon maple syrup

Instructions

  • Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  • In a large mixing bowl, combine the sweet potato cubes with the olive oil, garlic powder, smoked paprika, salt, and ground black pepper.
  • Toss the ingredients thoroughly until every cube is evenly coated with the oil and seasonings.
  • Spread the sweet potatoes onto the prepared baking sheet in a single layer, ensuring there is space between the pieces so they roast rather than steam.
  • Place the baking sheet in the oven and roast for 15 minutes.
  • Carefully remove the baking sheet from the oven and drizzle the maple syrup over the sweet potatoes. Use a spatula to toss them gently until the syrup is distributed.
  • Return the pan to the oven and roast for another 10 to 15 minutes, or until the edges are slightly charred and caramelized and the centers are fork-tender.
  • Remove from the oven and allow to cool for 5 minutes before serving to let the glaze set.
