Ingredients

  • 1 1/2 Cups Shredded Cheddar Cheese: Sharp cheddar provides a great flavor.
  • 1 Cup Shredded Mozzarella or Monterey Jack Cheese: For that perfect gooey cheese pull.
  • 8 Large Eggs: The foundation of our fluffy casserole.
  • 1/2 Cup Milk: Whole milk or 2% works best.
  • 1 Cup Sour Cream: This is the secret to a rich moist, and tangy egg custard.
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder
  • 1-2 Teaspoons Hot Sauce Optional: For a little kick.

Instructions

Preheat & Prep:

  • Preheat your oven to 375°F (200°C). Generously spray a 9x13 inch baking dish with non-stick cooking spray.

Combine Base Ingredients:

  • In the prepared baking dish, combine the frozen tater tots, diced beef, 1 cup of the cheddar cheese, and all 1 cup of the mozzarella cheese. Use your hands to toss everything together until it's evenly distributed.

Mix the Egg Custard:

  • In a large bowl, whisk together the 8 large eggs, 1/2 cup of milk, 1 cup of sour cream, salt, pepper, garlic powder, onion powder, and optional hot sauce. Whisk until smooth and fully combined.

Assemble the Casserole:

  • Pour the egg mixture evenly over the tater tot and beef mixture in the baking dish.

Bake to Perfection:

  • Place the dish in the preheated oven and bake for 45-50 minutes. The casserole is done when the center is set (a knife inserted comes out clean) and the edges are golden brown.

Final Cheese Topping:

  • Remove from the oven and sprinkle the remaining 1/2 cup of cheddar cheese on top. Return to the oven for 5 more minutes, or until the cheese is perfectly melted and bubbly.

Rest and Serve:

  • Let the casserole rest for 5-10 minutes before slicing and serving. This helps it set for cleaner slices.
