Ingredients

For the Potato Base

  • 4 medium sweet potatoes
  • 1 tablespoon Olive oil, salt, and black pepper to taste

For the Filling

  • 1 cup black beans rinsed and drained
  • 1 cup chopped broccoli and spinach
  • 0.5 cup cooked beef crumbled
  • 4 large eggs
  • 1 cup shredded cheese Cheddar, Pepperjack, or Cotija
  • 0.5 cup salsa
  • 0.25 cup avocado crema or sour cream

Instructions

  • Preheat oven to 400 degrees F or preheat air fryer to 375 degrees F.
  • Pierce the sweet potatoes with a fork and microwave for 5 to 8 minutes until slightly softened, then slice them in half lengthwise.
  • Carefully scoop out the inside flesh of the sweet potatoes, leaving a thick border to prevent the skin from tearing.
  • Brush the sweet potato boats with olive oil, season with salt and pepper, and bake or air fry until crisp.
  • Fill the boats with black beans, broccoli, spinach, beef, and crack an egg into each.
  • Top with shredded cheese and bake for an additional 10 to 15 minutes until the eggs are set and the cheese is melted and bubbly.
  • Garnish with salsa and avocado crema before serving. Save the scooped-out flesh for a quick mash side dish!
