- 4-6 Large Butter Croissants store-bought, preferably day-old
- 16 oz Chocolate Chip Cookie Dough store-bought or homemade
- Unsalted Butter for homemade brown butter variation
- Dark Brown Sugar
- Vanilla Bean Paste
- Bittersweet or Semisweet Chocolate Chunks
- Powdered Sugar for dusting
- Flaky Sea Salt for garnish
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Slice the croissants horizontally, cutting almost all the way through to create a sandwich-style opening.
Take a generous portion of cookie dough (about 2-3 tablespoons) and flatten it slightly.
Stuff the flattened dough inside the sliced croissant and gently press the top down.
Take additional small pieces of cookie dough and press them firmly onto the top of the croissant.
Place the assembled crookies on the baking sheet.
Bake for 10 to 15 minutes, until the cookie dough on top is golden brown and the croissant is crisp (aim for a gooey center).
Remove from the oven and let cool for 5 minutes to set.
Dust with powdered sugar and sprinkle with flaky sea salt before serving warm.
