Ingredients

  • 4-6 Large Butter Croissants store-bought, preferably day-old
  • 16 oz Chocolate Chip Cookie Dough store-bought or homemade
  • Unsalted Butter for homemade brown butter variation
  • Dark Brown Sugar
  • Vanilla Bean Paste
  • Bittersweet or Semisweet Chocolate Chunks
  • Powdered Sugar for dusting
  • Flaky Sea Salt for garnish

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Slice the croissants horizontally, cutting almost all the way through to create a sandwich-style opening.
  • Take a generous portion of cookie dough (about 2-3 tablespoons) and flatten it slightly.
  • Stuff the flattened dough inside the sliced croissant and gently press the top down.
  • Take additional small pieces of cookie dough and press them firmly onto the top of the croissant.
  • Place the assembled crookies on the baking sheet.
  • Bake for 10 to 15 minutes, until the cookie dough on top is golden brown and the croissant is crisp (aim for a gooey center).
  • Remove from the oven and let cool for 5 minutes to set.
  • Dust with powdered sugar and sprinkle with flaky sea salt before serving warm.
