  • 1 cup fresh spinach or green leaf lettuce
  • 0.5 cup bell peppers thinly sliced and patted dry
  • 0.5 cup cucumber seeded and thinly sliced
  • 0.25 cup green onions finely sliced

Instructions

  • In a small bowl, mix the softened cream cheese, mayonnaise, and Dijon mustard until smooth. This mixture acts as a moisture barrier to prevent soggy tortillas.
  • Prepare all vegetables by washing and thoroughly patting them dry with paper towels to remove excess moisture.
  • Lay the tortillas flat on a clean surface. Spread an even layer of the cream cheese mixture across each tortilla, leaving a one-inch margin at the top edge to help seal the roll.
  • Layer the deli turkey breast, turkey ham, and turkey bacon over the spread.
  • Evenly distribute the cheese, lettuce, bell peppers, cucumbers, and green onions over the protein layer.
  • Starting from the edge closest to you, roll the tortilla as tightly as possible toward the one-inch margin.
  • Wrap each completed roll tightly in plastic wrap and refrigerate for at least 30 to 60 minutes. This step is essential for structural integrity and clean slicing.
  • Remove from the refrigerator and use a sharp serrated knife to slice the rolls into one-inch thick pinwheels.
  • Secure with toothpicks if needed and serve chilled, optionally with ranch dressing on the side.
