Ingredients
  

  • 1 lb ground venison
  • 1 egg binder for moisture
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper to taste
  • Optional: 2 tbsp bacon fat or ground pork for added fat
  • Burger buns
  • Optional topping: cheddar cheese lettuce, tomato, caramelized onions, pickles, aioli

Instructions
 

Step 1: Mix the Meat

  • In a mixing bowl, mix together the venison, egg, Worcestershire sauce, onion powder, and garlic powder. If using bacon fat or pork, add it now. Be careful not to overmix; you want the meat mixture just combined.

Step 2: Shape the Patties

  • Divide the ground venison evenly and shape into burger patties. Aim for ¾-inch thickness so the burgers cook evenly.

Step 3: Heat the Pan or Grill

  • Preheat a cast iron skillet or grill to medium-high heat. Add oil or bacon fat to prevent sticking and enhance flavor.

Step 4: Cook Burgers

  • Place the patties on the skillet or grill. Flip the burgers only once, about 4–5 minutes per side. Do not press down—you’ll lose those precious juices.

Step 5: Let the Burgers Rest

  • Remove from heat and let your venison burger rest for 3–5 minutes. This locks in the flavor and gives you juicy burgers every time.
