Dry Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Wet Ingredients
- 1 large egg
- ½ cup milk
- 2 tablespoons lime juice

- 1 cup corn kernels fresh or thawed frozen
- 1 –2 jalapeño peppers seeds removed and finely diced

Prepare the Batter
In a medium bowl, whisk together flour, baking powder, chili powder, salt, and pepper.
